Easy Peasy Chicken Pot Pie

This is my quick and easy chicken pot pie recipe. One that I tweaked from an original that my mother gave me one day while I was trying to figure out what to feed my bottomless pit of a husband.

Easy Peasy Chicken Pot Pie


You'll need:
1 can - Peas and Carrots
1 can - Diced Potatoes
1 can - Cream of Chicken Soup
1 package - Pie Crusts (the rolls of dough, not the preformed stuff)
1 package - Pre-Cooked Cubes of Chicken


1 casserole dish with a lid


That's it!


*Note: I've made this on the fly before when I had no peas, carrots or anything else canned in the house. You can always substitute frozen veggies (I've used broccoli before) instead. Also, if you don't have diced potatoes, you can always use Cream of Potato Soup (with potato chunks in it) instead.*


Open one package of the pie crust dough (there should be two in there!), and cover the bottom and sides of your dish. If that doesn't quite cover it (mine is a 6x9 oval and one package doesn't quite do it) then get out the second package and cut enough to cover it. Keep in mind that the sides don't have to be covered to the top of your dish, just maybe 3/4 of the way.


Now, add in the:
  1. Cream of Chicken Soup
  2. Peas & Carrots
  3. Diced Potatoes, and
  4. Chicken


And mix...



Then, take  the rest of your dough (you should have at least 3/4 of a roll left) and cut into strips. Then cover the top of your pie :)


Bake at 400 degrees for 50 minutes.


Enjoy!

I'm sure you could make this prettier, or with chicken you cooked... potatoes you cooked and diced... but that wouldn't be Easy Peasy!

Hooded Toddler Towel

I love these towels (J obviously isn't sporting this sweet, pink one). I got the idea from Ashley's blog Make It & Love It. I made a University of Florida inspired bear one for a friend and I made a dinosaur one for J. *Update*This sweet pink one is hanging out at my Etsy shop :)


Wal-Mart has all of their "college" towels on sale right now. These huge, super soft, brightly colored (I can go on...) towels are only $3 - and the hand towels are $3 for 2.

They are way better than those paper thin towels I got at my baby shower and they actually dry my kid off :)

Day 5

FIVE DAYS!

Five days and only lemonade.

But to be honest. I think this will be the last day.

I will say that I feel a lot better. I have more energy, and I'm not eating crap all of the time. I definately have noticed how much food I shovel into my mouth throughout the day. Eating litle scraps here, cut the crust of the baby's sandwich... you get the point.

So thank you lemonade diet. Not only have I sworn off pancakes and syrup... I have a new respect for lemons...

Hopefully I'll be able to keep up the good habits from here on out!

Total weight lost: Almost 9 pounds!
Down a pant size (and actually fitting into it!)
I feel all around better :)

Day 4

Nothing much to report, so this will be a post and run.

I still have plenty of energy. I'm not slurping down all of the lemonade before 2 PM. Good and good.

I'm still losing "weight". Even better.

I will say that I feel a lot less "puffy" and I think I can see a difference. Two people even mentioned that they thought I was losing weight. Good.
